the chofetz chaim says two things about the eating beard:

and what if one is forgetful and or has a sickness? and cannot remember who it is the one to pay? then the laws of tzedaka (justice from the root tzedek) come into play, meaning we have 1. leket 2. peah 3. maaser 4,
and that giving tzedaka will ultimately lead to the past employees receiving their monies from the Source, as it says in pirkei avot, the work is long, the day is short, the workers are lazy and they (the workers) are assured their payment as they are paid from The One Above.
